Make Mine Caffeine

I’m not a coffee drinker- it’s just not something I enjoy. For my caffeine I love a good cup of tea. However. I live in a world of coffee drinkers and it’s definitely the beverage of choice at the studio. So I trust local experts for recommendations on which beans to buy (Aggie’s Blend at Sobseys or anything they recommend at Empire Coffee and Tea ) I also have a list of instructions on the fridge here that I go by for making a good pot of coffee. While we have a Keurig Machine I’m not fond of the waste associated with the pods and prefer our drip machine. Here’s the list I go by for making a good pot:

  • Keep your beans fresh: store coffee beans in an airtight container, to preserve oils, taste and aromas (you can get your coffee ground but this makes a sealed container even more important
  • Don’t freeze beans or ground coffee – if you are going to use very little- buy less coffee! The freezer burns the oils that give coffee it’s flavor
  • If you do grind your beans, do it right before brewing: coffee loses a great deal of it’s aroma within 15 min. of grinding
  • Use purified water: nothing ruins a pot of coffee more than tap water with chlorine or off-flavors
  • Avoid basic coffee filters: look for “oxygen-bleached” or “dioxin-free” paper filters
  • Don’t skimp on the coffee: the standard measure for brewing coffee of proper strength is 2 level tablespoons per 6-ounce cup I always add an extra spoon “for the pot”
  • Beware the heat: the proper brewing temperature is 200°F, or about 45 seconds off a full boil (most good coffeemakers regulate this automatically)
  • Keep your equipment clean: clean storage containers, coffeepots and grinders every few weeks to remove any oily buildup.

No matter how you enjoy your caffeine- use a real mug or cup, take a seat, take a breath, and enjoy!
